CHILLED STRAWBERRY SOUP RECIPE

Although my family has never stayed at Disney’s Grand Floridian Resort and Spa, we have dined there many times. In addition we make sure to ride the monorail and stop to just relax in the beautiful and spacious lobby.

Most trips we try to book a character breakfast buffet featuring Winnie-the-Pooh, Tigger, Mary Poppins and the Mad Hatter, or character dinner buffet featuring Cinderella and her stepsisters and stepmother. Both the breakfast and dinner buffets are at 1900 Park Fare. 

1900 Park Fare is a delightful restaurant with turn of the century charm. Make sure to check out Big Bertha – a French organ that sits up high. They don’t play it too often anymore, but if you ask your server, they just might.

The delicious chilled strawberry soup is a must have and is on both the breakfast and dinner buffets.

I have made this soup many times myself, but I have modified the recipe to make it a little healthier. 


ORIGINAL STRAWBERRY SOUP RECIPE
Disney World’s Grand Floridian Resort & Spa 1900 Park Fare

Yield: 4-6 servings

INGREDIENTS:
2 lbs frozen strawberries

16 oz. heavy cream

2 oz. sour cream

3 oz. plain yogurt

1/2 lb fresh strawberries for garnishing

Optional: Sugar (depending on the strawberries)

1. Thaw the frozen berries.

2. Blend all of the ingredients (except the berries) on low until smooth. Add the berries and continue blending.

3. Stir before serving.

4. Add fresh strawberry halves as a garnish.



MY REMADE RECIPE OF THE STRAWBERRY SOUP:

INGREDIENTS:
2 lbs. frozen organic (no sugar added) strawberries
or 
2 lbs fresh strawberries

16 oz. heavy cream (organic)

2 oz. sour cream (organic)

3 oz. plain yogurt (organic)

1/2 lb. strawberries for garnishing

Sugar to taste

I tend to cut down on the heavy cream and add a little more yogurt. This may make the soup runnier, but it is still tasty. If you would like a thicker soup and don’t want the calories of the heavy cream, add more strawberries.
